Chef Tre's Thai Crabcakes

Chef Tre is back for the last Sunday Night Football match-up of the season. Try these Thai crabcakes with your hungry fans to end the season with a touchdown!

Ingredients:
2 ounces sesame oil
6 ounces galanga -- peeled and grated
8 ounces shallot -- minced
4 ounces garlic -- minced
4 ounces lemongrass -- minced
4 pounds crab -- cleaned
4 tablespoons sambal
8 tablespoons soy sauce
4 tablespoons fish sauce
8 ounces green onion -- chopped
2 ounces cilantro -- chopped
2 ounces lime juice
4 eggs
1 cup mayonnaise
4 ounces panko

Instructions:
1. In a saute pan on medium heat, add sesame oil and saute the galanga,
shallots, garlic, lemongrass until translucent. Remove from heat
and set aside.

2. When mixture is cool mix in the crab, sambal, soy sauce, fish sauce,
green onions, cilantro, and lime juice.

3. Add eggs mayonnaise and panko.

Chef Tre is great! Why did they bump him? Lots of the mistakes on the show were still on some of his kitchenmates. Sucks. But, keep working em Tre!

My fiance' and I watched Top Chef religiously when you were on and we were sooo disappointed when you were sent home. We were in shock. As you can see even Hung was upset, along with Hung we thought it would "BOIL" down to just you 2. I would like some advice on how to turn my passion of cooking into my own business and own a Black Supper Club in Cleveland, OH. I am 34 I have not yet gone to Culinary school but cooking is like breathing and I eventually want to change my career from the fianancial industry into cooking and becoming a TOP CHEF like you please give me advice.
