1. In a medium saucepan, melt 4 tablespoons butter over medium heat. Add flour and whisk vigorously until mixture is smooth. Add cream and whisk until mixture is well combined.
2. Simmer over low heat for 15 minutes, stirring frequently. Add 1/4 cup diced mango, cilantro and bell peppers to mixture. Stir to combine. Season to taste with salt and pepper. Continue to simmer mixture for 15 minutes longer. Remove from heat, cover and set aside.
3. In a small bowl, mix 1 egg with 1 teaspoon water. Brush both sides of crab cakes with egg wash. Dip in crushed corn chips, coating both sides of each crab cake.
4. In a large skillet, heat olive oil over medium heat. Add crab cakes in two batches, cooking until golden brown on both sides. If pan is dry, add more oil for second batch. Cover with foil to keep warm.
5. Break remaining 11 eggs into a large bowl. Whisk well to combine.
6. In a large skillet, melt remaining 2 tablespoons butter over medium low heat. Add eggs and cook to desired firmness, stirring frequently. Season to taste with salt and pepper. Cover and keep warm.
7. To serve: Toast English muffins. Put 1 muffin half on each plate. Top each muffin with a crab cake. Spoon scrambled eggs over crab cake, dividing evenly between the plates. Drizzle with cream sauce and garnish with remaining diced mango.

1 bag corn tortilla chips, finely crushed
12 large eggs
6 English muffins (12 halves)
6 tablespoons butter
2 tablespoons flour
1 cup heavy cream
1 mango, peeled and diced
1/4 cup fresh cilantro, minced
1/4 cup diced red bell peppers
2 tablespoons olive oil, more if needed
Salt and pepper for seasoning
