Braised Black Chicken and Geoduck Ceviche with Cucumber Ribbons
Braised Black Chicken and Geoduck Ceviche with Cucumber Ribbons
Prep Time: two hours
Serves: 4
Directions:
Braise:
Caramelize your mire piox. When done, add the tomatoes, Sherry, & Brandy (make sure you pull the pot off the flame when you add the liquor).
Reduce by half.
Add the water, thyme, mint, apricots, tomatoes, and bring to a boil.
Add thighs and cook until tender at a low flame.
Quinoa:
Toast the Quinoa with olive oil
Add Shallot, garlic, cream, & water
Bring to a boil and bring down to a simmer. Cook until done.
Cucumber Salad:
Combine everything and season to taste.
Cracked Geoduck:
Cut the head off of the geoduck and skin.
Cut in half and wash the sand out
Sashimi the geoduck and then sliver
Mix all ingredients and taste for seasoning.

Braise:
Chicken Bones
2 Carrots – chopped
1 Onion – chopped
2 Stalks Celery – chopped
1/4 cup Diced Apricots
2 Sprigs Mint
1ea Scotch Bonnet
1/2 bunch Thyme
2ea Black Chicken Thighs
Sherry
1/2 Cup Brandy
1/2 Cup Water
1 Tomato – chopped
1/4 cup garlic – cleaned
1 Quart Water
Quina:
1ea Shallot (cleaned)
2 Cups Quinoa
1 Cup Cream
3 Cloves Garlic
4 Cups Water
Cucumber Salad:
1 Cucumber (Julienne)
1 Yellow Pepper
2tbsp Soy
1tsp Sweet Soy
1.5 tsp Lemon Juice
Cracked Geoduck:
1 geoduck
1 Finger Ginger – diced
1 Clove Garlic – Chopped
1 Serrano Chili – Diced
1/4 Cup Shao Xing
1/2 Cup Lemon Juice (Freshly Squeezed)
1 Cup Orange (Freshly Squeezed)
