Duck with Truffle
Duck with Truffle Scented Broth & Mushroom Ragout
Prep Time: 1 hour, 15 minutes
Serves: 4
Directions:
Season duck breasts with salt and pepper. Place in plastic seal bag and seal. Cook in water bath at 58 degrees celsius for 20 minutes. When done, slice.
Using a hot pan, quickly saute foie gras and remove (reserve fat). Add mushrooms and shallots and sauté until tender. Season with salt, pepper, chives and parsley. Fold in foie gras and vinegar.
In a hot pan, brown duck bones in oil. Chop duck bones, celery, onion, carrots, lemongrass and lime leaf; add to pan. Add water and reduce water to one quart, then add truffle juice and reduce until two cups.
Ingredients:
4 duck breasts, deboned and skinned
Salt and pepper to taste
4 oz foie gras, diced
1 cup chantrelle mushrooms
1 cup lobster mushrooms
1T shallots, minced
2T chives
1T parsley
1T balsamic vinegar
1/2 cup oil
1 celery stalk, diced
1/2 onion, diced
1 carrot, peeled and diced
2 sticks lemongrass, chopped
1 lime leaf
3 qts water
12 oz truffle juice

I did not like his attitude some times, like when he dropped the seafood, and eggs another time, and didn't bother cleaning it up, even for safety's sake. Nevertheless he has demonstrated over and over again that he is an extremely talented chef, and understands how to compose different flavors. It was hysterical to see him disagree with other famous chefs about their opinion of his food.

I have to say, at the beginning of the season I did not like you much due to your arrogance, it took away from your skill, but as the show went on and your humble/kinder side emerged I found myself rooting for you more and more. A great Chef not only has to be great with food they have to be good with people as well and you have both attributes. You truly deserve the title of Top Chef! I am really thrilled that you won! After a few episodes, my intuition told me you were the best. There is simply no comparison between your cooking skills and the rest of contestants. Dale is far worse. Casey is not very consistent. The only possible rival for you would be Tre. It was an amazing show when you and Rocco cooked side by side. I knew you did not need any one's help, but it just made the show so exciting. The finale went your way, you were very lucky that day. The score and compliments you got from FCI faculty members is the highest one. That was a big honor. Mr. English gave your duck dish 3 star, that was awesome. For me Top Chef equates to HUNG. I was very happy and thrilled on the outcome the judges had picked during season 3 but was quite disappointed with the outcome last season 2. I would love to see a woman win as well, but the win should be based off of merit, not off of gender. Your win was did from day one. Seeing someone that stayed out of the major drama, and cared about his food more than his feud was refreshing. I personally go by " If this doesn't effect my job performance, I don't care". Good to see someone else that works the same way.

I thought you were a little arrogant at first, but then I started realizing that all the comments you ever made on the show were never directed at a person directly. Your comments may have been harsh sometimes, but they always focused on the food. Some of the other contestants said some things about you directly and I think it just made them look bad.
