Peach BBQ Glazed Salmon with Crab Avocado Salad
Peach BBQ Glazed Salmon with Crab Avocado Salad
Prep Time: one and a half hours
Serves: 8
Directions:
For the BBQ Sauce:
Combine peaches, onions, garlic and bay leaf into deep saucepot. Saute for 5-6 minutes using a little olive oil. Deglaze with vinegar, Worcestershire, and orange juice. Simmer over low heat for one hour. Next add Tabasco and ketchup. Continue to simmer for another 30-45 minutes. Turn off heat and cilantro, basil, and lemon juice. Steep for 10 minutes. Strain and reserve warm.
For Crab Salad:
In mixing bowl combine crabmeat, avocado, green onion, tarragon, and basil. In another mixing bowl whisk together all other ingredients. Combine dressing with crabmeat. Fold lightly with spatula and season with salt. Hold cold until time to serve.
For the Salmon:
Using a hot grill, season salmon filets with salt and grill 3-4 minutes. Cook to desired temperature. Glaze with BBQ sauce.
To plate:
Place small amount of crab salad in the center of a round plate. Top crab salad with filet of salmon. Serve.
Ingredients:
For BBQ Sauce:
10 lb Peaches – cores removed
2 lb Smoked Yellow Onions
1/2 Cup of Garlic
3ea Bay Leaf
1 Cup Champagne Vinegar
1 1/2 cup Worcestershire Sauce
1 Cup Orange Juice
1/4 cup Tabasco Sauce
1qt Ketchup
1bunch Cilantro
1bunch Basil
2ea Lemon Juice
For Crab-Avocado Salad:
2lb Jumbo Lump Crab – deshelled
5ea Avocado – diced
3ea Bunch Chopped Green Onion
2tb Chopped Tarragon
2tb Chopped Basil
1/2 Cup Mayo
3tb Lemon Juice
3tb Champagne Vinegar
2tb Tabasco Sauce
2tb Wostershire Sauce
Salt to Taste
For Salmon:
8pc Salmon Filet 4oz each
Salt & Pepper

I have to admit I have never watched the show Top Chefs before. Just happen to be surfing the channels and to see you (a brotha) in the midst of some of the best, it was truly refreshing. I watched your failures and yur successes and all I can say is "You Go Boy." With me living in Florida, you had all of my favorites: peaches, crabs and salmon. I tried your dish Peach BBQ Glazed Salmon, I'm speechless. It is now a favorite in my house, although I added crushed pineapples and a few other items, it was truly a winner in my house.

We have busy schedules and the kids bring me the ingrediants from the market so I can make it for them. Always a treat. We love Tre's style - real satisfying recipes seasoned and prepared with passion. I learned much from this season and keep referring to the recipes, but this one we crave!
