Grilled Swordfish with Chorizo & Artichoke Potato Salad

Prep Time: more than three hours

Serves: more than 10

Directions:

Sautee chopped tomato and onion. Add sliced chorizo to the tomatoes and onion and blend in raisins. Marinade swordfish overnight in lemon juice and tarragon. Smoke swordfish and serve on top of the chorizo and raisin mixture.

Ingredients:

1 Swordfish
1 lemon
tarragon
6 chorizo
1/2 c yellow raisins
1 tomato
1 onion
Andouille sausage
