Vietnamese BBQ with Pine Nuts, Radish & Cucumber Salad
Vietnamese BBQ with Pine Nuts, Radish & Cucumber Salad
Prep Time: more than three hours
Serves: more than 10
Directions:
Mix all marinade ingredients together and marinate pre sliced meat over night.
Place meat on hottest part of grill until caramelized and medium well.
For Pickled Cucumber:
Mix all ingredients and pickle overnight in an airtight container.
To Assemble:
1. Place 2 slices of meat on lettuce
2. Top with one tablespoon of pine nuts
3. Garnish w/radish and cilantro sprig
4. Finish w/Maldon salt
5. Place pickled cucumber and basil and mint on side.
Ingredients:
2 lbs Ribeye, sliced ΒΌ inch thin
Marinade:
1 cup Kecap Manis
3 T Sesame Oil
1/8 cup Dark Brown Sugar
3 T Fish Sauce
1/4 cup 5 spice
3 T Fresh Ginger
Pickled Cucumber:
1 Whole seedless cucumber, sliced paper thin
1 cup rice wine vinegar
1/4 cup Mirin
1 Bay leaf
10 Peppercorns
2 heads Boston lettuce
1 cup toasted pine nuts
1 bunch mint
1 bunch basil
1 bunch cilantro
1/4 cup maldon salt
Radish sliced paper thin on a mandolin

I finally have the 5 spice, but I'm gonna start with 1/4 tsp for 2 lbs of meat and see how it goes from there...

But It's still a pretty good dish and it tasted good. You see, SWEET soy sauce, DARK brown SUGAR, Chinese 5 spice which is also sweet in some way. You see how sweet it is? But it tasted delicious though
