Skinless Chicken Marinated in Yogurt & Spices with Pasta & Vegetables
Skinless Chicken Marinated in Yogurt & Spices with Pasta & Vegetables
Prep Time: more than three hours
Serves: 8
Directions:
Mix yogurt, curry, Marsala, salt and lemon juice. Marinate chicken in yogurt mixture for 6-8 hours, then roast for 30 minutes or until done at 450 degrees Fahrenheit.
Cooked whole wheat pasta, then mix with olive oil and Parmesan cheese.
Serve chicken with whole wheat parmesan pasta and choice of seasonal vegetables.
Ingredients:
Chicken:
2 cup plain yogurt
2T curry powder
1T cream Marsala
3T salt
1t lemon juice
8 chicken legs, cut in half, skinless
Mac & Cheese:
1/2 lb whole wheat pasta
1/2 cup olive oil
1/2 cup Parmesan cheese
Add vegetables of choice

It's not a lot more calories or cholesterol, but if the point is more healthful food, then it matters. And it's certainly not enough to change a recipe.

On a side note, the judges need to understand that "healthy" only refers to living things, not food. "Healthful" is the adjective meaning "better for health." Use a healthy chicken to make a healthful dish.
