Tri-Colored Fusilli with Garlic & Sundried Tomato Sauce & Chicken
Prep Time: one and a half hours
Serves: 4
Directions:
Chicken and Pasta Prep:
Cook pasta until tender; freeze. Slice chicken and season with salt, pepper and 4 tablespoons of extra virgin olive oil; grill until done; freeze.
Sauce Prep:
In saucepan, add remaining oil, onion and zucchini. Cook until onion and zucchini are tender. Add canned tomato sauce and cook for about 30 minutes. Then, add pasta and chicken, occasionally stirring until heated through. Add basil and salt to taste.
Ingredients:
1 lb tricolored fusilli pasta
4 chicken breasts
Salt and pepper
1 cup extra virgin olive oil
1 onion, diced
2 zucchini, diced
8 oz can tomato sauce
3T basil
