Serves: 2
Directions:
Season pork generously with salt and pepper. On a preheated grill, sear pork; cook until medium. Allow to rest. Slice into half inch slices. Set aside.
Dice pickle; combine with mustard and mayo. Slice baguette lengthwise and add pickle mixture to both sides. Layer with pork, ham and cheese. Close sandwich and place in oven. Cook at 350 degrees until cheese melts and sandwich is warm.
Ingredients:
2 whole pork tenderloins
Salt and pepper
1 large dill pickle
1/4 cup Dijon mustard
1/4 cup mayonnaise
2 large baguettes
1/2 lb of black forest ham
1/2 lb of swiss cheese

The thing that makes the cuban is 2 things... first, mayo and mustard do NOT belong on it, it is something called "Mojo", which is a garlic sauce with spices that is used as the condiment, second, it is PRESSED, as was said by many in the episode. The press allows for the cheese and the condiment to fully be absorbed by the meats.
I think Howie needed to be a bit more aware of these things, being that he is a Miami native, and that sandwich is a big part of that cuisine. He should have chosen something he was more familiar with and knew would be executed to perfection.
I do not feel he is long for the competition, just because of what I have seen from him in the past few episodes.
