Scallop and Shrimp Ceviche Taquitos
Scallop and Shrimp Ceviche Taquitos
Prep Time: 2 hours, 15 minutes
Serves: 4
Directions:
Combine scallop, shrimp, chili, cilantro, green onions and juices of limes and lemon. Season with olive oil, salt and pepper. Marinate at least two hours. Char tortillas on the grill.
Place the ceviche (scallop-shrimp marinade) in the tortilla and add cabbage.
Ingredients:
1/2 cup bay scallops
1/2 cup shrimp 23 to 25
1 Anchren chili; finely diced
1/2 cup cilantro, finely chopped
2 green onions, diced
3 limes, zested and juiced
1 lemon, juiced
Olive oil
Salt and pepper
4 tortillas
1 cup shredded cabbage

I have loved all of CJ's Dishes so far and Taquitos were a huge hit at a BBQ I had over the Labor Day Holiday. I did also make the Lobster Salad but was afraid to over season. My guests found it to be a bit bland but I am sure if I was a more skilled chef it might have turned out a bit better. I am rooting for CJ to win this season thats for sure! I would like to add that I am a bit biased considering how smokin he is. He seems to be getting alot of love from the female fans from what I have read. Good for you CJ....and best wishes!! We could use your talents here in Nashville, TN...and it would also be a great opportunity for me to flirt with you!! Just thought I would throw that out there!!
