Marinated Anchovy on a Quinoa Croquette
Marinated Anchovy on a Quinoa Croquette
Prep Time: one hour and 30 minutes
Serves: 4-5
Directions:
In large salted pot of boiling water, cook quinoa for 20 minutes. Strain and lay out on sheet tray until it cools. Fold in eggs, herbs and flour. Let sit in fridge for 1 hour then form croquettes. Season with salt and pepper and deep fry to order. When ready to plate, add anchovies atop croquette.
Ingredients:
1 cup quinoa
4 stems dill
Handful parsley
1/2 bunch chives
4 egg yolks
1/2 cup flour to bind
2T salt and pepper
8 anchovies, marinated

Please post the rest of this recipe. The quinoa croquettes are the easiest part, and I'd really like to come close to the dish that impressed so many people. What was used to marinate the anchovies? Also, wasn't this served with a saffron Aïoli? Thanks.
