Directions:
Reduce apple cider with sugar (gastrique). Saute apples in extra-virgin olive oil then add rosemary. Season filet tips with salt and pepper, sear then toast baguette.
Ingredients:
1 cup apple cider
1t sugar
2t green apples, chopped
1t extra-virgin olive oil
1 sprig rosemary
6 oz filet tips
Salt and pepper to taste
2 croutons baguette, cut thin on a bias
