Tuna Tacos
Tuna Tacos
Prep Time: 30 minutes
Serves: 3
Directions:
Tortillas:
Fry tortillas at 350 degrees.
Tuna:
In small bowl, mix tuna, white soy and olive oil.
Avocado-Yuzu Puree:
Puree avocado with yuzu and white soy to a smoth consistency.
Mango Jalapeno Pickle:
In small bowl, mix rice vinegar, sugar and coriander. Add mango and jalapeno and allow to marinate.
Tequila-Crema:
In another bowl, mix crema, tequila and lime juice.
To Assemble:
Add tuna to tortilla then mango jalapeno pickle. Add avocado-yuzu and tequila-crema to sides. Garnish with tomatoes, cilantro, red radish and chopped onions.
Ingredients:
Tortillas:
3 pieces tortillas, cut with biggest ring mold
Tuna:
3 oz tuna, cut buttons
2T white soy
1T olive oil
Avocado-Yuzu Puree:
1 piece avocado
2T yuzu juice
1T white soy
Mango Jalapeno Pickle:
1/4 cup rice vinegar
1/8 cup sugar
1T coriander
1 piece mango, julienned
1 piece jalapeno, julienned
Tequila-Crema:
1/2 cup crema
4T tequila
3 pieces Mexican lime juice
Garnishes:
4 pieces grape tomatoes sliced into rounds
1/4 bunch cilantro, chopped
2 pieces red radish, sliced
1T chopped white onions
