Jerk Chicken Sandwich with Pickled Onions & Grilled Pineapple & Banana
Prep Time: 45 minutes
Serves: 4
Directions:
Jerk Chicken Sandwich:
Marinate chicken breasts with cinnamon, all spice, scotch bonnet pepper puree and soy sauce.
Grilled Fruit:
Grill pineapple and banana; brush with maple syrup.
Bacon Mayonnaise:
Sweat bacon until crispy, chop and blend with mayonnaise.
Assemble Sandwich:
Add grilled bun to plate. Layer with lettuce, tomato, bacon mayonnaise, pickled onion
and jerk chicken. Serve with grilled fruit.
Ingredients:
Jerk Chicken Sandwich:
4 chicken breasts
Cinnamon to taste
Jamaican all spice to taste
Scotch bonnet pepper puree to taste
Soy sauce to taste
Grilled Fruit:
1 pineapple
2 red banana
Drizzle of maple syrup
Bacon Mayonnaise:
1/2 lb bacon
2 oz mayonnaise
Additional Ingredients:
4 hamburger buns, grilled
1/2 head lettuce
1 tomato
1/2 onion (marinated in sherry and salt)

I love this!!!! So did my entire family, we agreed with Tom that it was better with the banana and pineapple on the sandwich.

All I can say is WOW! I cooked this 4 nights ago and I am still salivating from the flavors. I used a habenaro hot sauce instead of the scotch bonnet puree and omitted the onions. Very nice sandwich.
