Chocolate Cake with Chocolate Dipped Banana Bites

Chocolate Cake with Chocolate Dipped Banana Bites
Prep Time: one hour and 45 minutes
Serves: 4-5
Directions:
Melt chocolates and butter over a double broiler. In a bowl, mix egg yolks with flour and sugar. Add chocolates and butter mixture to the flour and yolk mixture.
In another bowl, whisk egg whites to stiff, but not dry peaks. Fold whites into chocolate. Pour into appropriate pan (either flexi pan or spring form).
Frozen Banana Bites:
Cut bananas into bite sized pieces. Pierce with toothpicks and freeze for 1 hour. Temper dark chocolate and shave white and dark chocolate. Remove frozen bananas and dip in melted chocolate. Place on cooling rack with sheet pan liner. Garnish with shaved chocolates and nuts and replace in freezer.
Rum Caramel Sauce:
Deglaze sugar, rum and vanilla and reduce by half. Whisk in cream and keep warm.
Ingredients:
200 grams 55% chocolate
200 grams 75% chocolate
250 grams butter
5 eggs (separated)
75 grams flour
150 grams sugar
Frozen Banana Bites:
4 bananas
Fancy toothpicks
Dark chocolate for garnish
White chocolate for garnish
Handful macadamia nuts, grated or microplaned
Rum Caramel Sauce:
1/2 cup brown sugar
2 cups rum
1t vanilla
1 cup cream
