Banana & Chocolate Ravioli

Banana & Chocolate Ravioli with Pudding
Prep Time: one hour
Serves: more than 8
Directions:
Wontons:
Lay wontons out and begin layering bananas and chocolate dust until 1/2 inch high. Then brush egg wash around the outside layer. Cover the wonton with the other and then pinch the ravioli together. Use a ring mold to cut away excess.
Deep fry at 350 degrees until ravioli are crisp but not browned. Dust with cinnamon sugar.
Nutella Coffee Pudding:
Place nutella, coffee and cream in a sauce pot. Bring to a simmer then strain through chinoise. Place back in clean sauce pot and add in small amounts of a cornstarch slurry with water until custard consistency is reached. Place in an ice bath to chill.
Raspberry-Persimmon Sauce:
Combine raspberries, persimmons and agave in a small saucepot. Bring to a warm temperature, place in vita prep and puree. Now strain through chinoise and place back in vita prep while still warm. Add salt and agar and puree. Place in fridge until service.
Ingredients:
Wontons:
24 wonton wrappers
1 banana (sliced into paper thin discs)
4 oz dark chocolate (pounded to powder)
1 egg (for egg wash)
1 small ring mold (2 inches)
1 cup sugar
1T cinnamon
Nutella Coffee Pudding:
1 cup nutella
1/2 cup ground coffee
1 pint heavy cream
1 cup corn starch
1 cup water
Raspberry/Persimmon Sauce:
1 1/2 cups raspberries
3 persimmons
1/4 cup agave
1 pinch salt
Agar to taste

This recipe combos my favorite things, bananas and dark chocolate. I will definitely give this recipe a try. And if you don't know what Nutella is, get yourself to an Italian grocer or a Whole Foods. I bet this pudding would be great in between layers of chocolate or banana cake! Great job
