Buttermilk Cake with Berry Sauce

Buttermilk Cake with Berry Sauce

Prep Time: one hour and 15 minutes

Serves: 4-5

Directions:

Buttermilk Cake:
Sift baking powder and salt together 3 times.

In a bowl, mix buttermilk with plain yogurt. Melt the butter and then cool to room temperature. Fill a medium-sized sauce pot halfway with water and boil. Mix eggs and sugar together in a stainless bowl that fits over the boiling water without touching it, until they are at 120 degrees. Let cool for 1 minute then in a standing mixer, mix on high for 7 to 8 minutes. Then another few minutes on low to stabilize. Mix in vanilla and drizzle in butter slowly on low-medium speed. When incorporated, alternate adding baking powder and yogurt-cream scraping sides.

Spray mold with nonstick spray and fill almost to the top with cake batter. Bake at 325 degrees for 30 minutes. To test if done place toothpick in the center, if nothing sticks to the toothpick when pulled out then the cake is done.

Berry Sauce:
Rinse all fruit and cook with sugar and water in a medium saucepan until it sticks to the spoon like a syrupy texture. Cool slightly and blend for 30 seconds.

Concord Grape Sauce:
Cook grapes with sugar, rosemary and balsamic vinegar. Puree and strain through a china cap.

Ingredients:

Buttermilk Cake:
1t baking powder
1t salt
2T buttermilk
1/3 cup plain yogurt
1 1/2 sticks butter
Water for boiling
4 eggs
1 cup sugar
1t vanilla extract

Berry Sauce:
Handful strawberries
Handful raspberries
Handful blackberries
Sugar to taste
1 cup water

Concord Grape Sauce:
1 bunch Concord grapes
1/2 cup sugar
1 sprig rosemary
1/4 cup balsamic vinegar

For the butter milk cake it was fantastic. It was very moist too. But the berry sauce was a bit too much. It migh have been I put to little sugar. Its just my personal opinion though. Thank you!

I was trying to find out if you used some flour when you made this cake? I didn't want to try it until I had all of the correct ingredients.
