Quinoi Crusted Chicken with Beans & Edamame
Prep Time: 45 minutes
Serves: 3
Directions:
Quinoi Crusted Chicken:
Season chicken breast with salt and pepper and roast with extra virgin olive oil. Mix quinoi, egg, flour and salt and pepper in a bowl and top chicken then bake.
Beans & Edamame:
Mix all ingredients in a bowl and set aside.
To Assemble:
Slice chicken breast and place bean salad in a bowl; top with chicken, orange and mint.
Ingredients:
Quinoi Crusted Chicken:
1 chicken breast
Salt and pepper to taste
Drizzle of extra virgin olive oil
1 cup quinoi, boiled and cooked
1 egg
1 tsp flour
Beans & Edamame:
1 cup canned black beans
1 cup shelled, cooked edamame
1 orange, juiced
1 lime, juiced
1 lemon, juiced
Salt and pepper
1T cilantro, chiffonade
Garnishes:
1 orange, supremed and cut into 3 each
Mint leaves, torn
