Fried Rice with Scallop Paste & Pineapple
Fried Rice with Scallop Paste & Pineapple, Grilled Scallop with Chinese Long Beans
Prep Time: 15 minutes
Serves: 4
Directions:
Fried Rice with Scallop Paste & Pineapple:
Prepare brown rice. In a hot pan with oil, scramble eggs, then remove. Add a bit more oil to pan then add onions, garlic, scallion, ginger, pineapple and xo jan; saute for 45 seconds then add rice and saute again. Season with white soy sauce, scallop paste and chili oil then add eggs back into the rice.
Grilled Scallop:
Season scallops with chili oil and salt. On a hot grill, add scallops and cook to medium.
Chinese Long Beans:
Add long beans into a deep fryer, then season with sweet soy and salt.
To Assemble:
Place rice on the bottom, then add long beans, then scallops on top and garnish with cilantro.
Ingredients:
Fried Rice with Scallop Paste & Pineapple:
1 bag Uncle Ben’s brown rice, 90 second in microwave
Oil for cooking
2 eggs, beaten
1/2 piece onion, diced
2 cloves garlic, minced
3T white scallion, chopped
1T ginger, minced
1/2 pineapple, chopped
1t xo jan paste
1T white soy sauce
1t scallop paste
1t chili oil
Grilled Scallop:
4 scallops
1T chili oil
2T salt
Chinese Long Beans:
10 long beans
1T sweet soy
2T salt

I did this recipe tonight. It was excellent! It was very easy to prepare and my boyfriend loved it. I had to do a couple of substitutions as I was unable to find some of the ingredients, but it was still a huge success and very tasty. Thank you Dale!
